I have to share this recipe with you

Oh man dinner tonight was SO amazing! if you try this recipe let me know after what you thought! I just bought this little cookbook at the check out at the Superstore.... I have NEVER done that before. It is from Better Homes and is called tex-mex favorites.........tex-mex is one of my favorite kinds of food! well.....truth be told there is little "food type" that I don't like!!

I made monterey tortilla casseroles.........I give it 5 lala stars.... (out of 5), Hailey didn't like it but the other girls all did, I think her not liking it had more to do with the oodles of popcorn she had right before dinner!!!

ok here is the recipe

4 servings (it fed me and the 4 girls and I have one whole baking dish still full and I am stuffed!)
prep:20 min
bake:25 min
6 6" corn tortillas, cut each into 6 wedges ( I used flour tortillas cuz the store didn't have any corn it was still really good!)
2 cups cubed cooked chicken ( I am sure any meat would do)
1 16 oz jar salsa verde ( I have NO IDEA what verde is???? so I just used mild chunky!!!)
1 cup frozen whole kernel corn
3 Tbsp. snipped fresh cilantro
3 Tbsp dairy sour cream
1 Tbsp all-purpose flour
1 cup crumbled Chihuahua cheese (never heard of that!) or Farmer's cheese ( I used that)
Sliced fresh jalapeno chile pepper (optional) I put a can of green chilies on mine and Morgan's
Chopped tomato (optional) ( I didn't do this part)

I also added some sliced black olives

1) preheat oven to 350 F. Lightly coat four 10-12 oz baking dishes ( I don't know what size mine were but they were oval baking dishes and they worked just fine, I am sure you could use a regular baking pan too just bake it for a little longer) with cooking spray. Line bottom and side of each dish with 5 tortilla wedges (I used more so my dishes must have been bigger); set aside. Place remaining tortilla wedges on baking sheet. Bake about 10 minutes or until crisp and golden.
2) meanwhile, in large bowl, combine chicken, salsa, corn, cilantro, sour cream, and flour. Divide mixture evenly among baking dishes.
3) bake for 20 min. Arrange baked tortilla wedges on casseroles. Top with cheese. (thats when I added the green chilies) Bake for 5 to 10 minutes more or until heated through. If desired, garnish with additional sour cream (which I did yum yum), jalapeno pepper, and tomato.

oh my it was so yummy! I think it is restaurant worthy!!! ( let me know mom if you ever do!!)
per serving 418 cal., 18 g total fat, 96 mg chol, 467 mg sodium., 36g carbo., 3 g fiber, 31 g pro.

I am thinking that's not so bad calorie wise...... is it?? I guess if you are being really carb sensitive you could eliminate the corn and scoop your part out without the tortilla's....leave the tortilla's for the kids!

I am so going to add this to my monthly dinner lists and really oh so easy to prep! and they aren't any odd ingredients to buy....well cept for the verde salsa!! maybe someone out there can tell me what that is?! and I thought you could use left over meat from roasts or pork chops and it would be equally yummy! I am always looking for meals to make with leftovers!

ok well I better go..... I have a slew of kids to put to bed early!! oh oh and I got my hair done today! I had dark brown, Burgundy and blonde chunky streaks put into it and it looks GREAT! I LOVE IT!!!!

Glad to hear that you are pampering yourself. Its good to do that once in a while. The meal sounds great. I have no idea what kind of salsa that was but I like to improv as well. I think i will see if that is something my kids would eat. When I do I will let you know. Enjoy the leftovers!

Looks Yummy! I'll have to try it. I've never heard of that cheese either. Our grocery does carry farmers cheese though.

Oh you guys really have to come visit me and I'll cook you some REAL New Mexican food!! "Verde" is green - in this case a green chile - and I must add that if you've never had real Hatch Green Chile you have not had green chile.

Chihuahua cheese is a cheese similar to Monterey Jack cheese (which is similar to Mozarella - just not as stringy). Anyway, "Contrary to popular belief, the cheese is named after its place of origin, the Mexican region of Chihuahua, not because it is made from the milk of the dog." HA HA! That cracked me up!

You have to come down here with Rena next month for our Balloon Fiesta and I'll cook for you! That would be SO MUCH FUN!!!

Hey Lala! Rena's not really coming here - just my wishful thinking after her posting on wanting a balloon ride. I totally WISH she/you could come out here. It would be a blast!
